Q. I gave my husband a Mediterranean cookbook for Christmas. He has been reading the recipes, and most of them require olive oil. We do not have a good olive oil in the house. Can you suggest one?

A. There is a new olive oil on the market from Portugal. This extra-virgin oil has a rich, dark color and fragrance of ripe Olives toenhance the taste of vegetables or boiled potatoes. A 1/2-liter bottle sells at Fairway for about $13. The oil called Sal de Mar, is also available in an organic extra-virgin variety, slightly more expensive and with a stronger taste of olives. It is excellent sprinkled on meats or poultry before roasting.
